Shakopee continues to thrive as a hub for growth and opportunity with the addition of several new businesses in recent months. These new establishments bring expanded services, fresh flavors, and exciting offerings to the community, further enriching our city’s vibrant atmosphere.
Here are some of the newest additions:
Holiday Gas Station
Address: 1605 Windermere Way
Opened in early November, this is the sixth Holiday Gas Station location in Shakopee. Open 24/7, the station offers a convenient car wash, bean-to-cup coffee, and classic convenience store fare, catering to the needs of both residents and travelers.
Wingstop
Address: 1180 Verling Drive East
Wingstop opened its doors in November, bringing its signature chicken wings to Shakopee. Open daily from 11 a.m. to midnight, Wingstop offers bone-in and boneless wings in 13 flavors, ranging from the mild Plain to the fiery Atomic. The menu also features chicken strips, sandwiches, and their famous ranch dressing, ensuring something for everyone.
Affinity Plus Credit Union
Address: 1714 Crossings Boulevard
Opened in early December, the Shakopee branch enhances Affinity Plus’ presence in the Twin Cities Metro area. Operating Monday through Friday from 9 a.m. to 4 p.m. in the lobby (and until 5 p.m. in the drive-up), the branch offers a variety of services, including notary assistance, a coin counter, and the unique ability to order and exchange foreign currency.
Tria Orthopedics
Address: 1700 St. Francis Avenue
Opening its doors in early November, Tria Orthopedics offers specialized Orthopedics Urgent Care, available from 8 a.m. to 4 p.m., seven days a week. Located in a newly built outpost shared with St. Francis Surgery and Endoscopy Center, Tria provides Shakopee residents with convenient access to top-tier medical care.
Soi 21 Asian Bistro
Address: 8048 Old Carriage Court
Soi 21 Asian Bistro combines the flavors of classic Thai and Hmong cuisines, offering dishes like Pad Thai, Tom Yum Soup, and specialties such as Crispy Tamarind Whole Fish and Mountain Hmong Sausage. Alongside its diverse menu, Soi 21 features a craft cocktail selection from its full bar.
“Together, we will build a community centered around incredible food and shared moments. Soi 21 will transform our space into a vibrant hub of joy and connection,” said Soi 21 owner Gaohnou Yang.
Soi 21 is open Monday through Saturday from 11 a.m. to 9 p.m. and on Sundays from 11 a.m. to 8 p.m. Happy hour is available Monday through Saturday from 2 to 5 p.m. and again from 8 to 9 p.m.
